Chore: Release `new` version of `fields` package to ship latest `AES`

There have been a bunch of updates courtesy of @dependabot https://github.com/dwyl/fields/commits/main
But they haven't been released in a while ... https://github.com/dwyl/fields/releases

Todo

• Create new minor version e.g. 2.10.0 that ships these features to Hex.pm so that our downstream apps can use them.
• Publish to Hex.pm
• Create Release on GitHub
• Test it in the auth App.
  • Confirm the AES cypher works: PR: Docs  auth#231
