Bring back old boat fly instead of entity control. on 1.21.11

Describe the feature

I feel like old boat fly was easier to Control and had a way better fellling, also idk if it is server realted, i cant reagualted the speed of the boat very well.

• This feature doesn't already exist in the client. (I have checked every module and their settings on the latest dev build)

• This wasn't already suggested. (I have searched suggestions on GitHub and read the FAQ)

The unified entity control logic is pretty much the same as the old standalone boat fly module.
Ensure you configured it properly if it feels off.
